"Amba Khatta" or Raw Sweet Mango Gravy (Not to confuse with Kancha Amba Chutney) is a typical Odia Recipe. You can get this tangy spicy yummy thing at any Odia feast. (i.e. Marriage & other functions, Domestic Festivals or Observance). In Odia everyone called this thing "Khatta". If we used "Sweet Raw Mango" for it, then everyone called it "Amba Khatta".   Lets checkout how to prepare this Amba Khatta at Home Kitchen.

Main Ingredients:

Sweet Raw Mangoes (washed and chopped)
Ghee or Oil
Jaggery (Guda)
Sorisa (Mustard)
Red Chili Powder (Lanka Gunda)
Turmeric (Haladi) powder
Few Curry leaves (Bhrusanga Patra)
Dry Red Chilies
Jeera Powder
Fenugreek seed powder (Methi)
Salt (as per taste)
Water (as per requirement)

Preparation:

Heat ghee or oil in a pan and let it get hot. Add chopped raw mangoes and fry well it for at least 5 minutes till light brown. Remove it from fire and keep aside. 

Now heat 2 tsp ghee or oil in a pan. Add Sorisa (Mustard), Dry red chilies, Curry leaves (Bhrusanga Patra). 

Now add previously fried mangoes to it. Add Haldi Powder, Red chili powder, salt and again fry. Add Jaggery (Guda) to it and cook for 5-7 minutes. Then add some (1-2 cup) water to it and mix well. 

Cover it and cook on medium flame for 10-15 minutes. Let the mangoes mix well the gravy, add methi & Jeera powder to it. And off the flame. 

Your "Amba Khatta" is Ready to serve.
